These bakery-style muffins are packed with fresh blueberries and will become your new favorite! Yields 12 muffins
Ingredients:
1/2 cup butter, softened
1 1/4 cups white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1/2 cup milk
2 cups blueberries
2-3 teaspoons sugar
Directions:
1. Preheat the oven to 375°F.
2. Cream the butter and 1 1/4 cups sugar until light and fluffy.
3. Add the eggs, one at a time, beating well after each addition. Add vanilla.
4. Sift together the flour, salt, and baking powder, and add to the butter mixture alternately with the milk.
5. Crush 1/2 cup blueberries with a fork, and mix into the batter. Fold in the remaining berries.
6. Line a cupcake tin with 12 liners. Fill with batter making sure that you fill all the way to the top of each liner. Sprinkle 2-3 teaspoons sugar over the tops of the muffins.
7. Bake for 25-30 minutes. Cool on a wire rack. Enjoy!
