Sweet and savory, this acorn squash is roasted with brown sugar and butter until caramelized. Easy side dish for Thanksgiving or any night of the week!
Ingredients:
1 acorn squash
2 Tablespoons butter, melted
2 Tablespoons brown sugar
1/4 teaspoon salt
Directions:
1. Preheat the oven to 400°F. Line a rimmed baking sheet with foil or parchment paper and spray with nonstick spray, Set aside.
2. Slice squash in half (from the stem to the bottom). Scoop out the seeds with a spoon. Place squash flat side down on a cutting board and cut into 1/2-inch slices.
NOTE: The skin is edible and will tenderize in the baking process.
3. Arrange slices in a single layer on the prepared baking sheet. Brush the top of each slice with half of the melted butter. Sprinkle with half of the brown sugar and season with salt.
4. Bake for 30-40 minutes, or until squash is caramelized and tender. Halfway through the backing time, flip the squash over; brush with remaining butter and sprinkle with remaining brown sugar.
