These cookies are soft and chewy with a hint of coconut taste. Be careful though, they are addicting! Makes about 2 dozen cookies

Ingredients:
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla
1 1/3 cups flaked coconut
Directions:
1. Preheat oven to 350°F.
2. Combine flour, baking soda, and salt together in a medium bowl; set aside.
3. Beat butter, brown sugar, and white sugar together in a large bowl with an electric mixer until smooth. Add egg and vanilla; beat until light and fluffy; about 3 minutes. Gradually blend in flour mixture, then stir in coconut until well combined.
4. Take 1 Tablespoon of dough at a a time and roll into a ball. Place dough balls about 3 inches apart on a cookie sheet lined with a silicone baking mat or parchment paper.
5. Bake in the preheated oven until golden brown, about 8 to 10 minutes. Allow cookies to cool briefly on the baking sheet before transferring them to a wire rack to cool completely.
