Fall in love with this healthier chocolate chip pumpkin loaf. Made with wholesome ingredients, it's a delicious and satisfying way to enjoy the flavors of autumn.
This is such a hit with my family, it disappers in no time!
Yields 1 loaf
Ingredients:
2 cups rolled oats
1 Tablespoon pumpkin spice
1 teaspoon baking soda
1/4 teaspoon salt
1 cup pumpkin puree
4 eggs
1/3 cup milk
1 teaspoon vanilla extract
1/3 cup honey
3/4 cup dark chocolate chips
Directions:
1. Preheat the oven to 350°F. Line a 9"x5" loaf pan with parchment paper.
2. In a blender or food processor, add the oats, pumpkin spice, baking soda, and salt. Blend until the contents are powdery like flour.
3. Add in the pumpkin, eggs, milk, vanilla, and honey and blend until thoroughly combined.
4. Stir in the chocolate chips. Pour batter into the prepared loaf pan. Top with additional chocolate chips (optional).
5. Baken for 35-40 minutes or until a toothpick inserted in the center comes out clean.
6. Let cool for about 15 minutes, slice and enjoy!
