Moist and fluffy chocolate cake covered in chocolate frosting
Ingredients:
Cake:
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
3/4 cup cocoa powder
2 cups white sugar
1 cup oil (vegetable or canola)
1 cup milk
2 eggs, beaten
1 cup boiling water
Frosting:
3/4 cup butter, softened
3 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/3 cup milk
Directions:
Preheat oven to 375°F. Grease a 10" tube or bundt pan.
Stir together flour, salt, baking soda, baking powder, and sugar.
Add milk, oil and eggs. Stir until combined. Add boiling water and stir again.
Pour into prepared pan and bake for 40-45 minutes or until a toothpick inserted into the middle comes out clean. Let cool.
For the frosting, beat the butter for 3-4 minutes until pale in color, occasionally scraping down the sides of the bowl. Add in powdered sugar, cocoa powder, and milk (TIP: sift the dry ingredients together for a smoother frosting with no clumps). Beat 3-5 minutes until light and fluffy. Pipe onto cake. This recipe makes a lot of frosting, so be prepared to have leftovers. OPTIONAL: Garnish the finished cake with colored sprinkles.
