These vegan brownies taste so fudgy and have the perfect brownie texture, you'd never guess that there are sweet potatoes in them!
Makes 9 brownies

Ingredients:
¾ Cup sweet potato puree
1 cup peanut butter, or your favorite nut butter
1 tsp vanilla extract
6 tbsp flour
⅔ cup sugar
6 tbsp cocoa powder
1 ½ tsp baking soda
⅛ tsp salt
½ cup chocolate chips
Directions:
1. Preheat oven to 325°F. Grease an 8-inch square pan.
2. In a bowl, mix the sweet potato, peanut butter, and vanilla until smooth.
NOTE: You can make your own sweet potato puree by roasting a sweet potato and then blending the flesh until smooth. Or, you can use store bought canned sweet potato puree.
3. In a separate bowl, combine the flour, sugar, cocoa powder, baking soda, and salt.
4. Combine the flour mixture into the sweet potato mixture to form a batter. Fold in the chocolate chips. Smooth into your baking pan.
5. Bake for 20 minutes. The brownies may look undercooked when you pull them out, but will firm up as they cool. If for some reason yours are too gooey after cooling, loosely cover and refrigerate for a couple hours. Enjoy!
