These chocolate chip sweet potato muffins are so good, you'll think they're a treat. But they are actually HEALTHY!
Yields 12 muffins
Ingredients:
1 medium sweet potato, cooked, about 1 cup mashed
2 large eggs
1/2 Cup Unsweetened Applesauce
1/3 Cup maple syrup or honey
1/3 Cup almond milk, or 2 % milk
2 tablespoons coconut oil
1 1/2 Cups All Purpose Flour, or oat flour
1 teaspoon Cinnamon
1/4 teaspoon nutmeg
1 teaspoon Vanilla Extract
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 Cup Dark Chocolate Chips , Plus 2 tablespoons for topping
Directions:
1. Preheat the oven to 350°F. Line a cupcake pan with paper liners.
2. In a medium bowl, add the mashed sweet potato, eggs, apple sauce, vanilla, maple syrup, milk, and coconut oil. Whisk until they are fully incorporated.
3. In a separate bowl add the dry ingredients: flour, cinnamon, nutmeg, baking powder, and baking soda. Mix to combine.
4. In a separate bowl add the dry ingredients: flour, cinnamon, nutmeg, baking powder, and baking soda. Mix to combine, then fold in the chocolate chips.
5. Using a scooper equally add the batter into the prepared muffin tin pan. Top with additional chocolate chips if needed.
6. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool for 5-10 minutes before handling. Enjoy!
