Peanut Butter Chocolate Chip Bars

Updated: Sep 29

These bars are thick & gooey and loaded with chocolate chips and dollops of creamy peanut butter. They are easy to make and perfect for satisfying your sweet tooth.

Makes 24 cookie bars

Ingredients:

  • 1 cup salted butter, softened

  • cup brown sugar, packed

  • ½ cup sugar

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 2 ¼ cup all-purpose flour

  • 1 teaspoon baking soda

  • 3 cups semi-sweet chocolate chips

  • ¾ cup creamy peanut butter

Directions:

1. Preheat oven to 350 degrees F. Line a 9×13 baking dish with parchment paper, set aside.

2. In a mixing bowl beat butter and sugars until light and creamy, about 2-3 minutes.

3. Add in eggs and vanilla extract and beat until well blended. Add in flour and baking soda.

4. Fold in chocolate chips.

5. Spread half of the dough in the bottom of the baking dish. Dollop the peanut butter onto the dough. Do not spread the peanut butter, drop by teaspoon or tablespoon instead.

6. Top with remaining cookie dough, making sure to not cover up the peanut butter. It's okay if it looks a little lumpy because it will bake down.

7. Bake in preheated oven for 22-24 minutes or until the top is lightly golden brown. Remove from oven and cool completely in pan.

8. Cut into bars and enjoy!
