You'll love this easy, no-bake treat. Ritz crackers stuffed with peanut butter and dipped in chocolate. Perfect for any occasion! Makes about 30 cookies
Ingredients:
2 sleeves Ritz crackers (about 60 crackers)
1 cup creamy peanut butter
white almond bark or white chocolate chips (approx. 2 cups)
semi-sweet chocolate chips (approx. 2 cups)
Directions:
1. Prepare a sheet pan lined with parchment paper. Spread some peanut butter (about 1/2 tablespoon) on top of each one, then top with another cracker to make a "sandwich".
2. Melt the white chocolate in a microwave safe bowl in 30 second intervals, mixing each time, until creamy. Dip each cracker cookie in the chocolate only half way and then lay back onto the sheet pan. Freeze until hardened, approximately 10 minutes.
3. Meanwhile, melt the semi-sweet chocolate in another microwave-safe bowl. Carefully dip the other side of each cracker cookie in the chocolate and lay back onto the cookie sheet. Freeze again until hardened.
4. Store these cookies in an airtight container on your counter, refrigerator, or freezer. Enjoy!
