Saltine Toffee (Cracker Candy)

You only need 4 ingredients to make this easy toffee candy that nobody can seem to resist! Saltine crackers coated with caramel and chocolate make a salty, crunchy holiday treat.


Ingredients:

  • 40 single saltine crackers

  • 1 cup butter

  • 3/4 cup brown sugar

  • 2 cups chocolate chips


Directions:

1. Preheat oven to 400°F. Line a rimmed cookie sheet with foil. Make sure that the foil completely covers the bottom and sides. Spray with pam. Place the saltine crackers in a single layer using enough crackers to fully cover the bottom. You may not need to use all 40 crackers.


2. Make the caramel sauce by melting the brown sugar and butter on medium heat. Cook, stirring often, for 3-5 minutes until the mixture comes to a boil. Do not allow the mixture to boil longer than 30 seconds because it will become too thick to spread.


3. Pour the caramel sauce over the saltines and spread to evenly coat.


4. Bake for 5 minutes. The caramel will be hot and bubbly. If the crackers moved around while baking, use a fork to move them back into place.


5. Place chocolate chips in a microwave safe bowl and cook in 30 second intervals, stirring each time, until completely melted. Pour the chocolate over the crackers and use a spatula to spread the chocolate evenly over the top. OPTIONAL: Sprinkle with chopped nuts or holiday sprinkles


6. Let the crackers cool at room temperature until the chocolate sets.


7. Remove cooled candy from pan and peel the foil away. Cut into snack size pieces. Store in an airtight container for up to 5 days.
