Sour Cream Double Chocolate Muffins

These muffins are the perfect way to start your day or enjoy as a snack. They are moist, fluffy, and packed with chocolate flavor. The combination of cocoa powder and chocolate chips, along with the sour cream, makes them incredibly decadent. Yields 12-15 muffins


Ingredients:

  • 1/2 cup vegetable oil

  • 1 cup white sugar

  • 2 eggs

  • 1/2 cup milk

  • 1 tsp vanilla extract

  • 2/3 cup sour cream

  • 2 cups all-purpose flour

  • 1/2 cup cocoa powder

  • 1 1/2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup semi-sweet chocolate chips


Directions:


1. Preheat the oven to 425°F. Place liners in a cupcake pan.

2. In a medium bowl, sift the all-purpose flour, cocoa powder, baking powder, baking soda, and salt together..


3. In a large bowl, whisk together vegetable oil, granulated sugar, eggs, milk, vanilla extract, and sour cream until well combined.


4. Add the dry ingredients into the wet ingredients and stir until well incorporated. Fold the chocolate chips into the batter.


5. Spoon the batter evenly into each cup or liner, filling each all the way to the top.


6. Bake the muffins for 5 minutes at 425°F/220°C. Then, keeping the muffins in the oven, reduce the oven temperature to 350°F/180°C. Bake for an additional 15-17 minutes or until a toothpick inserted in the center comes out clean.


7. Allow the muffins to cool for 5 minutes in the muffin pans, then transfer to a wire rack to continue cooling. Enjoy!
